Oven Pancake




Oven Pancake

3 tablespoons granulated sugar
1/2 teaspoon cinnamon
1/3 cup butter (that's 5 and 1/3 tablespoons)
4 eggs
1 cup milk
1 teaspoon vanilla extract
1 cup flour
3 tablespoons ground flax seed (optional)

Preheat the oven to 425 degrees.

Mix the sugar with the cinnamon and set aside.

When the temperature reaches 425 degrees, place the butter in a 9x9-inch baking dish and put it in the oven until it’s melted.

While that's melting, beat the eggs, milk, and vanilla in a large bowl until frothy.  Stir in the flour and the flax. 

When the butter is melted, remove the dish from the oven, carefully swirl the butter around to coat the dish, pour in the egg/milk/flour batter, sprinkle the sugar/cinnamon mixture on top and return it to the oven.

Bake for 25-30 minutes.  The "pancake" will puff up in magical ways.  It's fun for the kids to watch through the little oven window.

I made a french toast casserole on Friday and wondered if there was a way to oven make pancakes. Wow...thanks for sharing this method.
