Snickerdoodle Chex Mix


A sweet spin on the usual Chex Mix.

I noticed this on the side of the Cinnamon Chex cereal box, and I knew we had to try it.

(After looking high and low for Chocolate Chex to no avail, I substituted Annie's Chocolate Bunnies.)

Start with 2 cups of the Cinnamon Chex.
(Use a large microwavable bowl.)


Make a mixture of sugar and cinnamon.


I used these Chocolate Bunny Grahams.

Add 2 cups to the bowl.

Then toss in 4 cups of popcorn...

 And mix well.

 Melt half a stick of butter, and add to the cereal-popcorn mix. 
Stir well.

Then, microwave the mixture for two minutes,
stirring after one minute.

Microwave another minute and add the cinnamon sugar mixture.

Microwave for another minute.

Then let cool on a waxed paper.

Snickerdoodle Chex Mix
Make 16 1/2-cup servings

1/4 cup sugar
1 teaspoon ground cinnamon
2 cups Cinnamon Chex cereal
2 cups Chocolate Chex cereal
4 cups popped popcorn
1/4 cup butter or margarine

1.  In a small bowl, mix sugar and cinnamon; set aside.  In large microwavable bowl, mix cereals and popcorn. 

2.  In 1-cup microwavable measuring cup, microwave butter uncovered on High about 40 seconds or until melted.  Pour over cereal mixture, stirring until evenly coated. 

3.  Microwave uncovered on High 2 minutes, stirring after 1 minute.  Sprinkle half of the sugar mixture evenly over cereal mixture; stir.  Sprinkle with remaining sugar mixture; stir.  Microwave 1 minute longer.  Spread on waxed paper or paper towels to cool.  Store in airtight container.

Mmmm, looks good! And Annie's makes those little chocolate bunnies in a GF version, so it could be totally gluten-free. Love that cinnamon chex!

Oh I miss cereal so much!! this looks incredibly fabulous. I want to lick the screen ! Unfortunately all the GF cereals have corn in them which I can't do either. Sad:( but I did make a GF version of your homemade granola with faux butter too and it turned out really good actually... i just ate it all up too fast and didn't make a large enough batch cuz i want to ration my $6 a bag GF oats.
